Alongside each plate, raise a glass — cocktails kissed with Taiwanese teas, mountain herbs, and sun-ripened fruit, a glass of Taiwan Beer, cold and familiar, and the rare, gold-laden pour of Kavalan whisky, award-winning and quietly proud, like all great Taiwanese things.
